  1. 1 of 1 Lightly coat 2 baking sheets with nonstick cooking spray. In a bowl, mix 1 1/2 cups all-purpose flour and 1/2 tsp each baking soda and salt. In a medium bowl, beat 3/4 cup packed brown sugar and 1 stick (1/2 cup) softened unsalted butter until creamy and smooth, 2 minutes. Beat in 1 large egg and 1 tsp vanilla extract. Stir in flour mixture. Fold in 1 cup chopped unsalted mixed nuts and 1/2 cup red and green M&M's. Drop by rounded measuring tablespoonfuls, 2 inches apart, onto baking sheets. Bake at 350 degrees for 10 to 12 minutes, until lightly browned at edges. Let cool slightly on baking sheets. Transfer cookies to a rack to cool.
