• In a large, heavy-bottomed pot, heat vegetable oil to 375°. In a bowl, combine all-purpose flour with 1/4 tsp salt, then toss with drumettes and wings. In a small pot, melt unsalted butter over medium heat. Stir in harissa, honey, lemon juice and 1/4 tsp salt. Stir until warm, cover and set aside. Fry wings in 2 to 3 batches for 10 to 15 minutes each, until golden brown, making sure temperature stays close to 375°. (Keep first two batches warm in a 200° oven.) In a clean bowl, toss wings with sauce. Transfer to a platter and drizzle with more honey.
