Instant Pot "Roast" Beef
Sprinkle beef all over with salt and pepper. With multicooker on Saute, heat oil and cook beef until lightly browned in spots, 2 min per side. Set aside.Advertisement
In multicooker, combine broth, onion and garlic. Place rack over mixture.
Place meat on rack. Seal and cook 5 min on Manual. Let pressure release naturally, 7 to 8 min. Remove meat and tent with foil. Rest until it reaches 120° for rare, about 20 min.
Slice very thinly and sprinkle with salt. Serve with Chimichurri or jus.
