  • In a wide-bottomed pot, heat oil over medium. Add next 4 ingredients and cook, stirring occasionally, until onion is translucent, about 5 minutes. Season with salt and pepper.

  • Add chicken broth, bring to a simmer and cook 5 minutes. Add chicken and tomatoes, and return to a simmer. Add gnocchi and simmer per package directions, about 6 minutes. Stir in basil and divide among 4 bowls. Top with Parmesan, if using.
