Lemon Farro with Peas
In a saucepan, heat oil over medium. Add scallions and garlic; cook 3 minutes. Add farro, broth and thyme. Simmer with lid slightly ajar for 25 minutes, until tender.Advertisement
Stir in peas and diagonally-cut scallions during last 2 minutes. Drain; let cool.
Whisk yogurt, lemon juice, salt and pepper; stir into farro and add cherries.
