Combine chicken with lemon zest, thyme, salt and a few grinds of black pepper. Form into 4-inch patties and grill over med-high until temp reaches 165°, 15 to 18 min, turning halfway through.

Toss arugula with 1 tbsp lemon juice and a pinch of salt. Grill buns cut side down for 1 minute. Divide arugula evenly among bottom halves and top with burgers. Divide cheese spread evenly among top halves.
