  1. 1 of 1 Bring lentils, water and salsa to a boil. Reduce heat and simmer until tender, 30 to 45 minutes. Drain; season with salt. Divide among tortillas and top each with 1/4 cup cheese, 1/3 cup rice and 1/2 cup spinach. Fold up and bake at 400 degrees for 15 minutes. Serve with salsa and sour cream.
