  • Heat oil in a large skillet over medium-high. Add onion, celery, pepper and garlic. Cook 6 minutes, stirring occasionally. Stir in tomatoes and water; simmer, covered, 6 minutes. Add shrimp and cayenne; cook 3 minutes or until shrimp are cooked through. Serve with brown rice and quinoa blend.
