  • Heat oil in a large stockpot over med-high. Add carrot, celery and onion; sauté 7 min. Add potatoes to pot; cook 3 min. Stir in Clamato juice and 1 cup water. Bring to a boil, reduce heat to medium and simmer 15 min. Add clams with their juice. Heat through.
