Maple-Glazed Acorn Squash

  1. 1 of 1 Halve two 2 lb acorn squash through stem. Discard seeds. Cut into 1/2-inch-thick slices (you will now have half-circles) and place in a large bowl. Toss with 3 tbsp each melted butter and maple syrup, 1/2 tsp each chopped fresh thyme and salt and a few grinds of freshly cracked black pepper. Spread onto 2 large baking sheets in a single layer. Roast at 450 degrees for 40 minutes, turning once. Drizzle with additional maple syrup and sprinkle with more fresh thyme.
