Gnocchi Gorgonzola
Gnocchi are potato dumplings and are most often served as a side dish in Italy. In this quick and easy recipe, purchased gnocchi are tossed with a blue cheese and ham sauce to make a tasty main dish.

  1. 1 of 4 Bring a large pot of lightly salted water to boiling.
  2. 2 of 4 Crumble Gorgonzola cheese onto a sheet of parchment or waxed paper. Toss with cornstarch and set aside.
  3. 3 of 4 In a 10-inch nonstick skillet, heat ham over high heat until sizzling. Add frozen peas and heat through. Stir in crumbled Gorgonzola and the milk. Season with pepper.
  4. 4 of 4 Cook gnocchi in boiling water for 2 to 3 minutes, according to package directions. Drain, and toss with Gorgonzola sauce. Serve warm, sprinkled with Parmesan and freshly ground black pepper, if desired.
