Sausage "Risotto"
This risotto-style dish calls for Arborio rice but it's really more of a sausage and rice one-dish meal complete with mushrooms, peas, and tomato sauce. To completely cook the rice, be sure the mixture is simmering before you put it in the oven to bake.

  1. 1 of 1 Heat oven to 350 degrees F. In a large oven-safe pot, heat olive oil over medium-high heat. Add onion, crumbled hot Italian sausage, and mushrooms. Saute 6 minutes. Add Arborio rice; cook 1 minute. Add white wine and cook 1 minute. Add broth, marinara sauce, water, peas, salt and black pepper. Bring to a simmer. Cover; bake at 350 degrees F for 20 minutes. To serve, stir in Parmesan cheese and shredded fresh basil.
