Melissa Cookston's Grilled Pineapple-Bacon Salsa
Using a paper towel, pat the pineapple spears dry. Place on a hot grill and sear on all sides, 1 to 2 minutes per side.Advertisement
Remove from grill and let cool, then chop and place in large bowl. Add all ingredients except bacon to bowl. Refrigerate at least 30 minutes before serving.
Immediately before serving, add bacon and stir into salsa.
