  1. 1 of 1 In a small bowl, combine 1/4 cup mayonnaise, 1 small grated clove garlic, 3/4 tsp truffle oil and 1/8 tsp black pepper. In a separate bowl, beat 4 oz truffle goat cheese and 2 tsp heavy cream until spreadable. Combine 1 lb ground chicken breast, 1 egg, 1 tsp grated shallot, 1 tsp truffle oil, 1/2 tsp salt and 1/4 tsp black pepper until well blended. Form into 4 patties and place on a baking sheet lined with plastic wrap. Refrigerate 30 minutes. Heat grill to medium. Grill burgers 6 minutes per side, until cooked through (165 degrees ). Meanwhile, split 4 brioche buns and, during last minute, grill cut sides down. Place burgers on bottom bun halves, then add truffle mayo. Toss 1 cup arugula with 3/4 tsp extra-virgin olive oil and 1/4 tsp truffle oil; add to burger. Spread goat cheese on cut sides of bun tops, then add to burgers.
