  • In a food processor, mix onion, mint, parsley, tomato paste, oil, cumin, paprika, salt and pepper flakes. Process until smooth. Place chicken thighs and drumsticks in a roasting pan. Rub chicken generously with mint-and-cumin mixture. Cover and marinate at least 1 hour. Bake at 400° for 40 minutes or until juices run clear. Prepare couscous with broth, following pkg directions. Stir in spinach until wilted.
