Mixed Wild Rice Stuffing with Bacon and Chestnuts

  1. 1 of 1 Cook 4 cups wild rice blend (such as RiceSelect Royal Blend) for 15 minutes, according to pkg instructions, adding 1 tsp salt if mix is salt-free. Transfer to a large mixing bowl. In a large skillet, cook 3/4 lb bacon, cut into 3/4-inch pieces, over medium for 4 minutes. When bacon begins to brown, add 1 cup roughly chopped chestnuts and cook until browned, about 4 minutes. Use a slotted spoon to transfer mixture to mixing bowl, leaving fat in pan. Return pan to medium-low and add 2 finely diced medium yellow onions, 5 finely diced ribs celery and 4 cloves roughly chopped garlic. Cook until tender and onions are translucent, about 7 minutes, then transfer to mixing bowl. Season with 1/4 tsp each salt and black pepper. Stir in 1/2 cup chopped fresh parsley, 2 tbsp each chopped fresh thyme and chopped fresh rosemary and 1/2 tsp each salt and crushed red pepper. Transfer mixture to a 13 x 9-inch baking dish. Bake at 350 degrees for 30 minutes, until heated through and rice is golden and crispy on top.
