  1. 1 of 4 Bring a large pot of salted water to a boil. Add noodles and cook as per package directions. Drain and rinse in cool water. Toss in a bowl with sliced scallions, sesame oil and sesame seeds. Set aside.
  2. 2 of 4 Season chicken with salt and pepper. Heat oil in a large stainless skillet over medium-high heat. Add chicken and cook 4 minutes, until nicely browned; turn and cook an additional 4 minutes, until internal temperature reaches 165 degrees . Remove to cutting board; cut into cubes. Reserve skillet.
  3. 3 of 4 Return skillet to medium heat. Add mushrooms and saute 4 minutes, adding a pinch of salt. Remove to a plate and add snap peas and a few tablespoons of water to skillet. Cook 1 minute, until peas are bright green.
  4. 4 of 4 Divide noodles among 6 bowls and add chicken, mushrooms, snap peas, watercress, carrots, radishes and peanuts. Drizzle with peanut sauce and garnish with lime wedges.
