Nutty Roasted Asparagus
- 1 of 1 On a large rimmed baking sheet, toss asparagus and sliced shallots with olive oil; season with salt and black pepper. Roast at 400 degrees for 15 minutes. Sprinkle skinless, toasted hazelnuts over the top.
Make it a Meal
- 1 of 1 Toss 8 cups baby lettuces with 2 tbsp olive oil, 1 tbsp red wine vinegar and 1/8 tsp each salt and pepper. Serve asparagus on top and sprinkle with 1 cup each drained and rinsed butter beans and crumbled feta.
