Olive Oil-Poached Salmon with White Beans
In a large, deep sauté pan, heat oil, garlic, 1 sprig of rosemary and lemon peel until temperature reaches 180°.Advertisement
Season salmon fillets with salt and black pepper; add to oil and cook 12 minutes or until fish reaches desired temperature.
Meanwhile, in a pot over medium heat, combine cannellini beans, 2 tbsp of the hot oil, lemon juice, lemon zest, 1/2 tsp chopped rosemary, salt and pepper. Stir until heated and serve salmon on top.
Poach shrimp in olive oil, and serve over black beans with a cilantro-lime sauce.
