• Combine milk, eggs and brown sugar in a blender; whirl until smooth. Sift together baking mix and cocoa powder. Add to blender and whirl to blend.

  • Heat a silver-dollar pancake skillet or a large nonstick skillet over medium heat. Coat with cooking spray.

  • Drop one generous tablespoon of batter for each pancake onto skillet. Cook until small bubbles form on top,about 1 to 2 minutes. Flip pancakes over and cook 1 to 2 minutes more, until browned. Remove from skillet and keep warm until all pancakes are cooked.

  • Serve with maple syrup and sliced bananas, if desired.
