Pappardelle with Mushroom and Turkey Ragu
- 1 of 3 Heat oil in a large nonstick skillet over medium-high heat; add chopped onion and cook 3 minutes. Crumble in turkey and add garlic; cook 5 minutes, stirring occasionally. Stir in tomatoes, mushrooms, oregano, salt and red pepper flakes. Simmer 15 minutes, uncovered, stirring occasionally.
- 2 of 3 Meanwhile, cook pasta as per package directions. Drain, reserving 1/2 cup of the pasta water.
- 3 of 3 Toss pasta with sauce and reserved pasta water. Spoon into a large serving bowl. Add ricotta and basil. Gently stir. Sprinkle with Parmesan and serve immediately.
