Soak dates in hot water for 5 min. Add to a mini chopper along with 2 tbsp of the soaking liquid and puree.Advertisement
Transfer to a bowl and add oats, peanut butter, chocolate chips, 1/3 cup peanut butter powder and the salt. Stir to combine, adding more oats if mixture is very sticky. Wrap and refrigerate 30 min.
Form into balls (1 tbsp each), then roll balls in more peanut butter powder to coat. Makes about 20 balls. Tip: You may need to compress the dough so that balls hold together.
