  • Soak dates in hot water for 5 min. Add to a mini chopper along with 2 tbsp of the soaking liquid and puree.

  • Transfer to a bowl and add oats, peanut butter, chocolate chips, 1/3 cup peanut butter powder and the salt. Stir to combine, adding more oats if mixture is very sticky. Wrap and refrigerate 30 min.

  • Form into balls (1 tbsp each), then roll balls in more peanut butter powder to coat. Makes about 20 balls. Tip: You may need to compress the dough so that balls hold together.
