• Prepare grill for direct cooking over medium-low heat (350°).

  • Stir cream cheese, sugar and thyme until blended. Set aside. Cut each peach in half through stem end and discard pit. Lightly brush peach halves and bread on both sides with oil.

  • Brush grill grates clean. Grill peaches over direct medium-low heat, with lid closed, until lightly charred and beginning to soften, about 8 minutes, turning once. During last minute of grilling time, toast bread over direct heat, turning once. Remove peaches and bread from grill.

  • Spread each bread slice with an equal amount of cream cheese mixture. Cut peach halves into 1/4-inch-thick slices. Divide slices evenly among bread slices, overlapping them slightly.
