• Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente, 10 minutes. Drain. Meanwhile, heat olive oil in a large skillet over medium. Add red, yellow or orange sweet peppers and diced Canadian bacon. Cook 3 minutes. Stir in mixed cherry tomatoes; cook 3 minutes. Stir in tomato sauce, salt and black pepper. Simmer 5 minutes. Remove from heat and stir in heavy cream. Toss sauce with penne and top with grated Parmesan.
