Persian Pesto with Pistachios
In a food processor, pulse together the parsley, 1/2 cup of the pistachios, garlic, lemon zest and remaining spices.Advertisement
With the food processor running, drizzle in olive oil and lemon.
Serve over cooked fish and garnish with remaining pistachios. Makes 1 cup.
Tip: Roll pistachios in a dish towel to remove their skins, which can muddy up the color of a recipe.
