• Place potatoes in a pot with enough salted water to cover by an inch. Bring to a boil and cook 12 min. Drain and return to pot. Meanwhile, coat a rimmed foil-lined baking sheet with nonstick spray and add tilapia fillets. Spread 1 tbsp basil pesto onto each and season with salt and pepper. Bake at 400° for 12 min. Mash potatoes in pot with milk, sour cream, butter and 1/2 tsp salt. Season with pepper and serve with a green vegetable.
