• Cook vermicelli in salted water per pkg instructions. Drain and rinse with cold water. Add to a large bowl and toss with 1/2 tsp salt. Toss with scallions, cabbage, carrot, basil, mint, peanuts and 1/4 tsp salt.

  • Meanwhile, pat steak dry. Sprinkle all over with 1/2 tsp salt and 1 tsp five-spice powder. Heat a medium stainless skillet over high; add 2 tbsp oil. Cook steak until temp reaches 125°, about 5 min per side. Let rest 5 min, then slice against grain.

  • Whisk lime juice with sambal oelek, 1 tsp five-spice powder, 1/4 tsp salt and remaining oil. Pour 3/4 of the dressing over noodle mixture and toss well. Top with steak and drizzle meat with a little dressing. Garnish with more scallion, peanut and sambal oelek, if desired; serve with remaining dressing.
