  • Melt chocolate chips.

  • Stir in half of the chopped bacon and all of the pistachio extract.

  • Working quickly, spread mixture in an even layer over a parchment-lined baking sheet. Top with the pistachios and remaining bacon. Gently press into chocolate.

  • Refrigerate at least 30 minutes. Break apart to serve.

  • Tip: Roll pistachios in a dish towel to remove their skins, which can muddy up the color of a recipe.
