  • In a small pot, combine first 4 ingredients and bring to a simmer. Cook 5 minutes, until tender.

  • Stir in cornstarch and cook 1 minute. Transfer to a blender.

  • Cut the top off of the coconut. Pour the coconut water into the blender with the plum mixture. Add the cinnamon and blend until smooth.

  • Serve in the coconut with a straw.
