Roast for 30 minutes, then at 350 degrees for 1 hour

  1. 1 of 3 Place roast in a baking pan fitted with a wire rack. Pat dry. Let stand at room temp for 1 hour.
  2. 2 of 3 Heat oven to 450 degrees . Rub beef, especially cut sides, with butter. Season all over with salt and pepper. Roast 30 minutes. Reduce oven temp to 350 degrees and roast 30 minutes. Carefully remove from oven. Combine molasses, brown sugar and 1 tbsp water; brush over beef. Roast another 30 minutes or until temperature reaches 125 degrees .
  3. 3 of 3 Let rest 25 minutes (temp will rise to 135 degrees ). Slice, and garnish with pomegranate seeds and parsley. Serve with more molasses on the side.
