Pork and Broccoli Curry

  1. 1 of 2 In a large skillet, heat oil over medium-high until it shimmers. Add shallots and cook, stirring often, until softened, 2 minutes. Add pork and cook, stirring often, until just browned, 2 minutes. (The meat should still be pink inside.) Add curry paste and cook, stirring, until fragrant, about 20 seconds.
  2. 2 of 2 Add next 3 ingredients and bring to a simmer. Add broccoli, reduce heat to medium-low and gently simmer, stirring occasionally, until crisp-tender, 5 minutes. Stir in lime zest and a generous squeeze of lime juice. Check seasonings, adding salt to taste. Serve with rice and cilantro, if using. Tip: Opt for precooked rice. Heating it just before dinner saves you 15 minutes of cooking time.
