  1. 1 of 6 Heat oven to 425 degrees . Rub pork with pepper and salt. Heat 1 tbsp oil in a large skillet over medium-high. Brown pork, about 6 minutes.
  2. 2 of 6 Spoon 1 tbsp soy sauce over pork and place on a small rimmed pan. Bake 20 minutes, until temp is 145 degrees .
  3. 3 of 6 Meanwhile, reduce heat under skillet to medium. Add 2 tbsp oil, onion and frozen veggies. Saute 4 to 5 minutes, until crisp-tender.
  4. 4 of 6 Microwave rice as per package directions, 90 seconds. Stir rice and 3 tbsp soy sauce into skillet.
  5. 5 of 6 Push mixture to one side of pan and add eggs. Cook, scrambling, 2 minutes. Stir egg and rice mixture together.
  6. 6 of 6 Divide rice among 4 bowls. Slice pork and fan over rice.
