Pork Carnitas Tacos
- 1 of 1 Coat slow cooker with nonstick cooking spray. Place 2 lbs thick-cut boneless pork chops in slow cooker; season both sides with 1 tsp each oregano and cumin, 1/2 tsp salt and 1/4 tsp black pepper. Add 1 1/2 cups tomatillo salsa, 1 diced sweet red pepper, 1/2 cup cilantro leaves, 3 sliced scallions and 4 cloves chopped garlic. Cover and cook on HIGH for 3 hours or LOW for 5 hours. Remove pork and shred; return meat to slow cooker and stir in 1/2 cup tomatillo salsa. Spoon into 12 hard taco shells. If desired, serve with chopped tomato, shredded lettuce, chopped onion, sliced radishes, lime wedges and sour cream.
