Pork Loin Roast with Two Sauces

In a small bowl, combine garlic, lemon juice, sage, savory, thyme, salt and pepper. Brush pork roast with olive oil and rub with garlic-and-herb mixture.
Place pork in prepared pan and roast at 450° for 20 minutes. Lower oven heat to 325° and roast an additional 80 to 90 minutes or until internal temperature reaches 145°. Let rest 10 minutes.
While pork is resting, prepare gravy. Pour off all but 2 tbsp of the fat from roasting pan. Place pan over medium heat and sprinkle with flour. Cook 1 minute, scraping up any browned bits from bottom of pan. Gradually whisk in vegetable broth and 1 cup water. Bring to a boil and cook 2 minutes, whisking constantly. Strain into a small saucepan and keep warm. Slice pork and serve with gravy and Fig and Port Sauce.
