Roast and 80 to 90 minutes at 325°F



  1. 1 of 4 Heat oven to 450 degrees . Fit a large roasting pan with a rack.
  2. 2 of 4 In a small bowl, combine garlic, lemon juice, sage, savory, thyme, salt and pepper. Brush pork roast with olive oil and rub with garlic-and-herb mixture.
  3. 3 of 4 Place pork in prepared pan and roast at 450 degrees for 20 minutes. Lower oven heat to 325 degrees and roast an additional 80 to 90 minutes or until internal temperature reaches 145 degrees . Let rest 10 minutes.
  4. 4 of 4 While pork is resting, prepare gravy. Pour off all but 2 tbsp of the fat from roasting pan. Place pan over medium heat and sprinkle with flour. Cook 1 minute, scraping up any browned bits from bottom of pan. Gradually whisk in vegetable broth and 1 cup water. Bring to a boil and cook 2 minutes, whisking constantly. Strain into a small saucepan and keep warm. Slice pork and serve with gravy and Fig and Port Sauce.
