  1. 1 of 1 Heat oven to 400 degrees . Line a baking sheet with foil. Combine 1 teaspoon of the cumin, salt and cayenne. Trim pork and pat dry with paper towels, coat with vegetable oil and rub with spices. Place pork on prepared baking sheet. Roast at 400 degrees for 20 minutes or until internal temperature registers 145 degrees . Let rest 5 minutes.

Compote

  1. 1 of 1 In a large saute pan, combine vinegar, brown sugar, cloves, cinnamon and remaining 1 teaspoon cumin on medium-high heat until sugar dissolves, about 1 minute. Add fennel, onion, apples and garlic; cook 15 to 20 minutes or until apples have softened.

Spinach

  1. 1 of 1 Meanwhile, make spinach. In another large saute pan, heat olive oil over medium heat. Add garlic and caraway seeds; cook 1 minute. Add spinach and cook until wilted, about 3 minutes. Season with salt.
