Pork with Blueberry Balsamic Sauce

  1. 1 of 3 Heat oven to 400 degrees . In a small bowl, combine salt, onion powder and pepper. Rub over pork.
  2. 2 of 3 Melt butter in a large stainless skillet over med-high. Sear tenderloin, 3 min per side. Move to a small rimmed baking pan lined with foil and transfer to oven. Roast 15 to 20 min, until temp reaches 140 degrees . Let pork rest 5 min before slicing.
  3. 3 of 3 Meanwhile, reduce heat under skillet to medium. Add blueberries, vinegar, oregano and sugar. Cook 7 min, scraping up browned bits in pan, until berries have popped and mixture has reduced slightly. Slice pork and spoon sauce over slices. Serve with asparagus and cauliflower rice.
