• Heat oven to 400°. In a small bowl, combine salt, onion powder and pepper. Rub over pork.

  • Melt butter in a large stainless skillet over med-high. Sear tenderloin, 3 min per side. Move to a small rimmed baking pan lined with foil and transfer to oven. Roast 15 to 20 min, until temp reaches 140°. Let pork rest 5 min before slicing.

  • Meanwhile, reduce heat under skillet to medium. Add blueberries, vinegar, oregano and sugar. Cook 7 min, scraping up browned bits in pan, until berries have popped and mixture has reduced slightly. Slice pork and spoon sauce over slices. Serve with asparagus and cauliflower rice.
