Chocroute is the French word for sauerkraut and also refers to a baked dish made with pork and sauerkraut. This adapted German-French recipe contains three kinds of pork for maximum flavor.

  1. 1 of 3 Combine sauerkraut, potatoes, carrots and pepper in large flameproof casserole or Dutch oven.
  2. 2 of 3 Arrange pork chops over sauerkraut. Add wine. Cover tightly. Bring to a simmer. Cook gently about 1 hour or until potatoes are tender.
  3. 3 of 3 Add sausage. Cook 15 minutes or until sausage is heated through. Add salt to taste if desired.
