Corn-Bread-Coated Pork Chops
- 1 of 3 Whirl together briefly corn-bread stuffing and parsley in food processor just until slightly ground. Combine the stuffing and stuffing seasoning packet, if included, in a shallow baking dish and spread out evenly.
- 2 of 3 Brush both sides of chops with yogurt. Dip the chops in stuffing mixture to coat thoroughly. Place on greased baking pan.
- 3 of 3 Bake in preheated 400 degrees F oven for 45 to 50 minutes or until a meat thermometer inserted in the thickest part of the chops registers 160 degrees F. Decorate as an animal and serve with green beans and baby carrots if you wish.
