Grilled Cajun Pork
Pork and Rice:
- 1 of 1 Combine paprika, cumin, cayenne, allspice, salt and sugar. Reserve 1 teaspoon rub.
Pork and rice:
- 1 of 2 Sprinkle remaining rub on both sides of pork. Let stand 20 minutes. Bring 4 cups water to a boil in large saucepan. Add rice and reserved teaspoon rub. Cover; simmer 20 minutes. Drain and rinse beans; add to rice along with corn and scallions. Cover and cook 5 more minutes.
- 2 of 2 Meanwhile, prepare grill with medium-hot coals or heat gas grill to medium-high. Grill pork for 4 minutes per side or until an instant-read thermometer registers 160 degrees F. Serve with rice on the side.
