Parmesan-Coated Pork

  1. 1 of 4 Heat oven to 400 degrees F. Line baking sheet with foil. Place flour, 1/4 teaspoon of the salt and 1/8 teaspoon pepper on sheet of waxed paper. In shallow dish, lightly beat eggs. Place bread into food processor; pulse until fine crumbs form. On another sheet of waxed paper, combine bread crumbs, Parmesan cheese and sesame seeds.
  2. 2 of 4 Coat both sides of pork with flour mixture; shake off excess. Dip into egg; coat on both sides with crumb mixture. Place on prepared sheet.
  3. 3 of 4 In 12-inch skillet, over medium-high heat, heat 2 tablespoons oil. Add pork chops; cook 2 minutes on each side until golden. Remove foil from baking sheet. Place pork on baking sheet; bake in 400 degree F oven 10 to 12 minutes or until internal temperature is 155 degrees F on instant-read thermometer.
  4. 4 of 4 Clean skillet with paper towel. Heat remaining 1 tablespoon oil in skillet. Add onion; saute 2 minutes. Add garlic; cook 1 minute more. Add beans, mushrooms, remaining 1/4 teaspoon salt and 1/8 teaspoon pepper; cook, covered, stirring occasionally, 10 to 12 minutes or until tender. Add marinara; cover, cook 1 minute to heat through. Serve with pork chops and cooked couscous, if desired. Makes 6 servings.
