Pork With Cider Sauce

  1. 1 of 4 Combine flour, thyme, salt and pepper in plastic food-storage bag. Add pork; shake to coat.
  2. 2 of 4 Heat oil and 1 tablespoon butter in large nonstick skillet over medium heat. Add pork, working in batches if necessary; cook about 2 minutes on each side or until cooked through. Transfer pork to platter; keep warm.
  3. 3 of 4 Heat remaining butter in skillet, scraping up any browned bits from bottom of skillet. Add onion; cook 2 minutes or until slightly softened.
  4. 4 of 4 Add apple cider, dried fruit, cider vinegar and ginger to skillet. Boil about 12 minutes or until slightly thickened. Spoon sauce over pork. Serve immediately. Makes 4 servings.
