• Bring a medium-size pot of lightly salted water to boiling. Cook Ramen noodles according to package directions, omitting seasoning packets. Drain and keep warm.

  • Meanwhile, slice pork tenderloin into medallions. Heat vegetable oil in a 12-inch nonstick skillet over medium-high heat. Cook pork for to 3 to 4 minutes, or until no longer pink. Remove to a plate. Add frozen mixed stir-fry vegetables and cook 3 minutes.

  • Meanwhile, whisk together chicken broth, cornstarch, sugar, ground ginger and garlic powder. Add back to skillet along with pork. Cook 2 minutes or until thickened. Serve alongside Ramen noodles. Makes 6 servings.
