  1. 1 of 1 Cook bacon in nonstick skillet until crisp. Add garlic, scallops and shrimp; cook over medium-high heat 4 minutes. Add coconut water, water, salt and cayenne pepper. Bring to boiling. Add frozen mixed peppers; simmer 3 minutes. Stir in instant rice; cover, remove from heat. Let stand 5 minutes. Makes 6 servings.
