  1. 1 of 2 Render fat from bacon in large heavy skillet, preferably cast iron. Remove bacon from pan and use for another purpose.
  2. 2 of 2 Add sliced potatoes to fat in skillet; sprinkle with salt and pepper. Cover; cook 15 minutes. Uncover; turn potatoes over. Add onion. Cook, uncovered, flipping potatoes occasionally, for 15 minutes or until potatoes are cooked through and browned. Makes 6 servings.
