  2. 2 of 5 In a large bowl, combine the dressing, apricot preserves and tarragon. Set aside.
  3. 3 of 5 Meanwhile, season the pork medallions with salt and pepper on both sides. Grill over high heat until the internal temperature reaches 155 degree F on an instant-read thermometer, about 3 to 4 minutes per side.
  4. 4 of 5 Add the sliced endive to the bowl with the dressing and toss to coat. Season to taste with salt and black pepper.
