• Sprinkle chicken thighs with chili powder and salt. Heat oil in a large electric pressure cooker on sauté setting. In 2 batches, brown chicken 3 min, turning once. Return chicken to pot and stir in onion and diced tomatoes. Secure lid and set to pressure cook for 8 min on manual. Release pressure and switch to sauté; shred chicken and return to cooker. Warm tortillas (the easiest way: wrap in a damp paper towel and microwave 1 to 2 min). For each taco, stack 2 tortillas and top with 1/4 cup chicken mixture, some sour cream and shredded leaf lettuce.
