  1. 1 of 1 Cut potatoes into 1/2-inch pieces; add to a large pot of lightly salted water and cook 10 minutes. Drain. In a large bowl, whisk oil, vinegar, salt, sugar and pepper. Stir in celery and pimiento. Gently fold in potatoes.
