Slow Cook on High for 3 hours


  1. 1 of 1 Coat a slow cooker with nonstick cooking spray. Add 2 cups red lentils, 2 cups diced onions, 3 tbsp green curry paste (such as Thai Kitchen), 6 cloves chopped garlic, 2 tbsp each soy sauce and chopped ginger, 2 tsp sugar and 1/8 tsp cayenne. Stir in 2 cups water, 1 1/2 cups carrot juice and 1 cup halved yellow cherry tomatoes. Cover and cook on HIGH for 3 hours. Stir in 1 cup coconut milk and 1/4 cup chopped cilantro. Serve with 4 cups cooked jasmine rice, lime wedges and, if desired, Thai Salad.
