Rice Pudding with Almonds and Cider Syrup
In a 3-quart heavy-bottomed saucepan, stir first 4 ingredients. Bring to a boil; cover and simmer on low, stirring occasionally, 20 minutes or until rice is tender. Stir in almond extract and cinnamon.Advertisement
Transfer to a large container, press plastic wrap directly onto surface and cool 30 minutes. Refrigerate 4 hours or overnight. Serve chilled or at room temperature, topped with almonds and syrup or honey.
