Wild Rice Pilaf
Grape tomatoes add garden-fresh flavor to this easy side dish recipe made with both white rice and packaged wild rice mixes.

  1. 1 of 2 In a large nonstick saucepan, heat oil over medium heat. Add onion and pepper and saute for several minutes, stirring constantly, until onion is tender.
  2. 2 of 2 Add white rice and rice from mixes; cook, stirring, for 1 minute. Add flavor packets and 4 cups water. Bring to a boil, then reduce heat to low, cover and cook 20 minutes or until rice is tender; stir in tomatoes during last minute of cooking. Remove from heat. Let sit 10 minutes. (See photo) Do-ahead tip: Prepare, let cool, cover and refrigerate up to 3 hours. Reheat over low heat, adding more water if needed.
